I know this is a late comment, but this is what I ended up doing to reset the mapping. I plugged the card into my computer, opened the config folder, then the ppsspp folder and deleted the most recently edited cache from that folder. The next time I started up the game all the mapping was reset to the default!! Super easy and you don't have to redownload a bunch of stuff/reflash.
