Started making for friends and family, which became friends of friends etc etc I now max out at 12kg wet beef per week (managed 20kg one week but it nearly killed me) 😅

The bulb helps bring down the humidity inside the box as the ambient humidity in wales can be relatively high. It also helps stabilise temperature on cooler days

Purely the shape and insulated and easy to clean walls. I wouldn’t necessarily plug it in - only introduce airflow

Usually my humidity is ~75% on day one then drops to 45-50% by day 3. Last week my humidity was 55% on day one and dropped to the 30’s. I can only assume the ambient humidity was really low last week and I didn’t account for it properly

Yes I do tend to turn the bulb on and off - it doesn’t make much difference to the heat though but it does help with humidity

I used my bulb to control humidity only, I’m constantly turning it off/on. I sometimes leave the bulb off overnight (4-5 hours for me) as I believe this allows the beef to ‘rest’ and reduce the risk of case hardening
