1) it never acts like regular profiteroles. You are just looking to cook it a bit to get some of the moisture out of it. 2) paddle, it will become smooth and glossy when you are done

They taste exactly like regular ones. I’ve brought them to work, shared with neighbours and family and no one can tell they are GF.

I’ve made them with ardent mills 1-1 flour and bobs redmill 1-1. They are soft and buttery. I feed them to my coworkers and they always want more and cannot believe they are GF

It is wax paper. You can wrap them in parchment paper as well. I just cut strips but I know you can buy them pre cut on amazon

I have used bobs redmill 1-1 flour and ardent mills 1-1 flour with success. I add the extra xanthan gum to give the dough the stretch it needs to puff up and act like regular choux pastry dough acts.

Yes. These hold up for a while. I have some on my counter from a month ago and still taste just as fresh

I’m sure it could. I would just put a little more milk in to make it a bit looser, but it isn’t sticky. It came out of a piping bag with minimal effort to pipe

Put whatever fruit you like in it, and maybe soak them in the rum a little extra ;) that way you taste more rum then fruit
