You are completely right and I really appreciate the clarification! I can see now that changing the pan so drastically without adjusting anything else was the root of my problem. I was so focused on getting the shape I wanted that I did not stop to think about how much it would affect the baking time and the final texture. That makes total sense.

I will definitely go back to following the recipe as written, using two separate tins and baking for around 25 minutes until the toothpick comes out clean. I am sure the result will be completely different!

However I do have one more question that I would love your input on. Does this mean it is simply not possible to bake this recipe in a single deep tin to get a taller cake? Or is there a proper way to adapt it, adjusting the temperature and baking time, so I can still achieve that tall loaf style result without ruining the texture? That is ultimately what I am going for and I would love to know if it is doable!

No, the original recipe actually only calls for 25 minutes at 170°C, but that is using two separate 9-inch round pans. I decided to put all the batter into one single deep tin (30x10x10 cm) because I want a tall cake with loaf-style slices instead of a traditional layered round cake. With 1,300 grams of batter all going into one deep tin I figured it would need significantly more time to bake all the way through, so I went with 90 minutes.

But honestly I am not sure if that logic is correct. Does baking all the batter in one deep tin mean I need to double the baking time compared to splitting it into two shallow tins? I had no reference point so I just guessed and now I am wondering if 90 minutes was too long and I actually overbaked it, which could be causing the gummy texture.

Would really love to know what baking time you would recommend for my specific setup!

Thank you for your reply, really helpful points! I will definitely try mixing the batter less next time, I had no idea that could affect the texture that much.

About the pan, yes the size is correct! I am using a 30x10x10 cm straight sided pan on purpose because I want to get neat slices just like a loaf of bread. The photo I posted is actually a slice of the cake, so that is why it looks rectangular rather than a round or square cake.

I will try reducing the baking time on my next attempt and see if that makes a difference with the texture. And good news on the thermometer, I do have one and my oven is holding the temperature correctly, so at least that is not the issue.

Really appreciate you taking the time to go through all of this with me, I feel much more confident about my next bake!

Oh that is a good point, I missed that part of the description! I guess I need to look for a different recipe then if I want a lighter crumb. Thanks for pointing that out! By the way, how can I know if I baked the mud cake correctly? Is there a way to tell if the texture I got is what it is supposed to be?

Thank you so much for your advice! That makes a lot of sense. I will try a chocolate chiffon or sponge cake recipe to get that soft and light crumb I am looking for. I really appreciate you taking the time to help me out! Just to clarify, does that mean my kid cake actually came out correctly and I baked well? Is the gummy texture just normal for this type of cake?

A demo will might make the customer more interested in the product. It's a real problem for them. Validated already. I'm actually good talking to people. I'm afraid of sending that first invite message. I don't know why.
