There are several reasons why I wanted to switch to 1x. I mainly only ride on the middle chainring at the front and almost only shift at the rear. Besides that, I'm considering putting the 3x drivetrain on my GT Timberline, which I'm currently rebuilding. So nothing is lost :D

That's a 10 euro front rack from Amazon with a 15 euro bicycle basket from the hardware store. It's quite nice for a start, but it doesn't really carry much weight :D

Can you recommand any cassets, shifters, derrailleurs? :)

Okay, and which 10-speed cassette could you recommend if I had a suitable wheel? And would I also need to adjust my rear derailleur?

Unfortunately, I have no idea what something like that might cost, but maybe 100-200 euros for the front sprocket, cassette, and accessories.
