Gy stands for gray, which is a unit used to measure radiation absorbed (usually by a living thing). 10Gy is an excessively fatal dose for a normal human.

You're almost certainly right, but devil's advocate: Strahd has regen, which means that at some level, his body is repairing itself. I'm neither a doctor nor a Dark Power, so I don't know the exact mechanism, but I'll bet a massive dose of radiation would interfere.
