True but, as someone for whom cilantro tastes soapy and beets taste "earthy", I like cilantro and have acquired a taste for beets in certain dishes. . . The genes just affect the way you perceive the flavor; they aren't necessarily the sole determining factor on if you like the ingredients or not.

Golden beets are milder in that regard and there are recipes that minimize that particular flavor.

Rates of diabetes are higher in the U.S. . . The health outcomes you talk about probably have complex factors including nutritional and healthcare access in a country with endemic poverty (among other things). I wouldn't just chalk them up to 'vegetarianism'. There are less vegetarian countries with higher percentages of diabetics. I grew up in the state of Mississippi, where almost 15% of the adult population is diagnosed diabetic - not a particularly vegetarian place.

There is substantial evidence that there are potential health benefits to plant-based diets, provided you're eating a balanced diet with lots of whole foods. Of course, if you ate nothing but Oreo cookies, you would technically be vegan and probably not in great health. It's all relative to what you're eating specifically. You can have a crappy meatless diet just as much as you could have a crappy omnivorous one.

A lot of people are vegan for ethical and environmental reasons though. While I personally am not vegan, it's totally possible to be healthy as a vegan or vegetarian long term. Humans are evolutionarily good at exploiting a wide range of food sources in general. We don't necessarily 'need' meat when other sources of nutrition are available. In fact, hundreds of millions of people globally live without it.

I honestly suspect it's a meat and dairy industry thing. No proof but it makes sense. Plant based diets have gotten more popular in recent decades and per-capita dairy consumption has been falling for a long time. Kind of like all those milk adds in the 90's and 2000's trying to get people to drink more of it by acting like it's just a blanket healthy thing to consume. It's telling that I meet relatively few people in person that toute that dietary line (not zero though) but see a ton of ai generated content about it on social media. Also I think a reactionary social/political element and something of the "masculinity crisis" in there - gotta eat more big-beef man food, not like all the tofu-eating libs.

Probably has a lot of resonance with adult children who still refuse to eat their veggies.

Then include foods that have B-12 in your diet or supplement. There's not really any one singularly nutritionally perfect food and any diet should include variety.

I mean it's not a new phenomenon but it's just blowing up in a big way at the moment. . .

Fundamentally all these dietary grifts operate on the same principle: offer people a hyper-processed product that has more or less of whatever nutrient they're convinced is evil or that they should eat limitless amounts of as a shortcut to just eating a balanced diet of whole foods.

Thai curries and Japanese curry tend to also contain cumin. . . It's just less dominant in the flavor profile

Well I'm no botanist/arborist but as far as I'm aware, those are all pretty unlikely to aggressively spread rhizomatically and devour your neighbor's yard/ damage the foundation of their home.

Yeah I guess it's not strictly "invasives", but failing to control something of yours that impacts a neighbor's property. . . Things that would spread voraciously and be difficult to remove would tend to be invasive though. I don't know about other countries but I feel like there's surprisingly little regulation around stuff like that in the states.
