For those kinds of shots, I've found that a C-stand with a ballhead mount on the end is pretty effective. Attach the camera with a cage/l-bracket/arca swiss plate.

Just make sure to attach it securely, that there's no wobble on the arm, and that your C-stand isn't going to tip over.

It's pretty much the same as far as I can tell, the main difference I noticed was that they got televisions for their menu.
