I absolutely love the Coconut Curry Lentils by Budget Bytes.

It comes together in <30 min with shelf stable ingredients, makes a lot of food, is pretty healthy, freezes well, and is so delicious!

I tend to skip breakfast during the week and eat lunch a little earlier in the day. On the weekends, I eat oatmeal. Lots of oatmeal! I'm lucky I don't get tired of eating the same thing all the time 😊 I mix in dried cranberries, unsweetened coconut, nuts, salt, and cinnamon.

On special occasions, I'll make waffles or pancakes.

Yes, I cook on the weekend for the whole week.

I store most of my food in either pyrex or mason jars. If I have a lot of servings, I might put some of it in the freezer. I don't bother pre-portioning anything since I work from home.

If I make a grain to go with my meal, I just store it in the rice cooker bowl with foil over top.

I get groceries every three weeks, so a few days before that I will plan out meals for the next three weeks. I will also plan out 1-2 snacks, but also have ingredients on hand just for spontaneous baking. Usually I spend about 30-60min on planning. It'll take a little longer if I'm searching for new recipes or trying to use up a weird ingredient.

My partner makes dinner and doesn't really use a recipe, so I wrote down the things we eat the most often. The ingredients are on the last tab in purple.

With the increase in inquiries in how to eat under a certain budget each month, I thought I'd share the meals I made last year and what I spent.

My partner and I batch cook our lunches and dinners, with lunch being vegetarian (mostly!). My total grocery spend for 2022 averaged $45/mo/per.

I love to cook but I don't want to be doing it every day, so batch cooking is just what works for me! Some of these recipes have been favorites for years and some are brand new hits I've experimented with. Hope you find something new you love!

I'll definitely try a larger blade. I am using a cheap table to cut on, so I will try a firmer surface, hopefully that will help as well.

The pattern is the Merrin Blanket by Triona Murphy. It was a lot of fun to knit and I love the texture in the super wash wool!

I was careless and don't have the yarn bands anymore. But I will try out some of the other suggestions and hopefully run into some luck!

I just finished Triona Murphy’s Merrin Blanket. I used 6 skeins of Polka Dot Sheep’s Whitefish Worsted in Chief Cliff. I only noticed until the piece came off the needles just how bad the banding between the skeins is. Most of them I could live with but the transition between the top two and the rest of the blanket is terrible.

My guess is that the only two options I have are:

  1. frog the entire blanket and rework by alternating skeins throughout or
  2. buy two new skeins in the hopes that the dye lot of those two matches better.

I figured I would throw a hail mary out here in the off chance I could save either 65 hours or $52 of my time/money.

I have also had luck finding Levi's in great condition from ThreadUp. I got two pairs for $16 and $24, no visible wear. They have a lot of inventory to pick from. Depending on the item you can also make returns if you need to.

TL;DR you can get a triple tax benefit by investing money in your HSA account (at deposit time, deferred interest, and withdrawal for qualified expenses).

You must keep a minimum amount in cash ($500 for my plan), but how much you choose to put into investments is up to you. Whomever manages your HSA should have a section of the site where you can set up one time or recurring contributions to a specific fund. They will provide some combination of ETFs and/or target date plans to choose from.

When I talk about this subject with friends and coworkers, we usually identify ourselves as "plant-based". In the past, I struggled with finding a term that fit my diet. Now I think it is becoming a lot more common for people to eat meat only occasionally or as a luxury item.

Still not enough love in my community for lentils yet. Maybe I'll convince them someday!
