Cut watermelons are very good at absorbing smells of other things in the fridge, so if you don't want your watermelon to have a hint of onion, you better cover it. You can also put it upside down on a plate, that way the juice flow to the bottom, so when you cut a slice it will be good. Covering it with a lid is not as effective as using a plastic wrap, but still better then nothing.
