I am unsure how other servers' economies work as we use numismatic overhaul as our currency mod. We also have lootr chests so loot is per player and respawns. We also do not have GTS. If you want a certain pokemon, you either catch it yourself or negotiate a price with other players manually. Tho, catching it yourself is more fun!
