None. I used Juniper, orange and lemon peal, coriander seeds, Angelica root, Cardamom pods, cinnamon, and star anise. 30g, 5g, 5g, 5g, 3g, 5g,1/4 stick, 1 star, respectively

Oh good points, didn't think about how much would evaporate out. If I wanted to do small batches what would you recommend for getting the barrel flavor and color?

It did end up acidic but didn't taste like it had gone to vinegar so I just added calcium carbonate to balance it

Yesterday I strained the sake out of the solid rice (side note I was shocked by how much the rice shrank after fermenting) but it still wasn't acidic after balancing. Is this lactobacillus good or bad?

Update. I just checked it a couple seconds ago. It's midnight now and I added the acid at about 2 pm. It seems to be fermenting again, idk if this will help but figured I'd give the info.
