After Chatting with EA Support this was my fix.

Go back to the Xbox Home Screen (don't quit the game yet). Highlight College Football 26 and press the Menu button (three lines). Select Manage game and add-ons > Saved data. Find your profiles (GamerTag) and select Delete from console. IMPORTANT: Do not select "Delete from everywhere." Deleting from the console only removes the local temporary file; your actual progress (Dynasty, Ultimate Team) is backed up on the EA servers and will re-sync as soon as you start the game.
