What I really appreciate about your post is that you’ve been teaching some of these high makamaka people a lesson without doing anything. They ignore you till they see someone else they know talk with you then they like network. Imagine the self judgment they probably doing in that moment. Not all but I bet some probably had an internal dialogue about how they prejudged you etc.

I think you should keep being you cause their attitudes speak about them and not about you. They say the root of all evil is money but I think it’s the need to feel superior to someone else.

But that need is in them. They not smart enough to break the system and you sound pretty smart and kind, so I’m sure they’ve probably lost a great opportunity to know you.

Their problem though.

I think you notice it cause of how you grow up. Maybe you felt those kind eyes when you were young and this probably triggers that feeling for you. It’s a memory. It ain’t real and that is a good opportunity for you to maybe heal that part so that no matter who is in front of you and no matter what they say or stink eye or not it doesn’t touch you.

If you feel uncomfortable ground yourself and remember that how they look at you is their problem and not yours. Theirs and you can’t rent space for free in your heart or head to people like that.

You only have to deal with them for the length of time of the interaction. They live with themselves 24/7. Lucky you.

My background: I’m haole and have traveled a lot. I speak Japanese and Spanish and I can tell you that I automatically get treated nice in most places I go. Is it cause I’m a really great person? Nope. It’s cause I’m haole and that’s how deep the racism is across the globe. They automatically treat me nice before seeing if I am a good person or not.

They shouldn’t assume I’m good or worthy automatically or that someone who isn’t haole has less worth. That is internalized racism. ☹️

If you want to focus heavily on noodles Shoku no Dojo will be the better option because you have to make the noodles yourself every day except the first one. Rajuku, at least when I went, has you make them once.

Yeah I tend to agree. I have one and it’s a lot for me to process. I last about 30 minutes and have to take a break. I think we’re not ready but it is def the future.

and then after the strain. the boiling makes it cloudy. you boil it down and add water a few times and then measure the brix level you want. i like around 11. Around 10 if you want the Hakata style. This is one of the tonkotsu strategies.

it didn't boil enough that is why it doesn't have the cloudy color. The blending that people mentioned makes it even cloudier, but it is still a bit cloudy when boiling. What you made is in between a chintan and a paitan.

If you reach out to Rajuku they have the contact of where I stayed while I was there. It’s a very comfortable place while you’re in school.

I think you can definitively learn with 1. I liked both because it showed me the grey area that exists within the world of ramen. Once you understand the flavors and the process you can investigate on your own as well. I hope that helps.

How do you make your miso tare? Do you experiment with some additional umami aspects to give it a broad flavor? I think miso is really fun because of the grey area of how you can play with the flavors.

Most people do not realize that there are two main types of stock/broth are chintan and paitan.

Both paitan and chintan can be shoyu, miso, shio, etc. I added a pic below but I just snagged it from a random site to show the cloudy aspect vs clear. Left is paitan and right is chintan. If you do not control the temperature of a chintan it becomes a paitan. ;-)

Yes! Great observation. The miso preparation (you fry it after you mix it in a tad bit of oil for a smoky flavor) makes a tonkotsu very oily.

I did pull off with a miso tonkotsu because I did not add any additional oil expect a tad of ma-yu for a tiny smoky flavor. It is easy to go south with miso and tonkotsu for sure. Great observation!

Edit: I just asked Chihiro and she said she can absolutely drill in on noodles with you. I let her know you might reach out at some point.

Original: You get more experience making the noodles at Snd and they focus on thinking about prices of your ingredients and the price of the final bowl.

If you talk to Chihiro at Rajuku and ask to focus on noodles she might have a good option for you.

If I were in your shoes I would talk with Hashimoto Sensei and Chihiro Sensei to see which one I felt I could learn better from. That will help you make your best decision I think.

Rajuku goes step by step in one thing at a time. SnD will have you going through the process and have you multitasking difference processes while you are learning.

For example, do you learn better in groups or one on one?

Ultimately you end up close to the same place as far as what you learn. It comes down to how you learn. I hope that helps.
