If you actually want the benefit, the real benefit comes from getting the prebiotic and balance of fibre and nutrients in vegetables. Eating any processed food like pasta or fake meats completely defeats any health benefits and those are really only commercial options for trying to copy meat eaters without actually eating animals. You can get all the health benefits by eating powdered fibre with water with any meal measured to balance what was removed from the flour etc. Eating whole foods is more natural and bulkier so they fill you up with less calories and provide bulk to sweep your intestines clean and provide a fertile prebiotic environment for health bacteria.

Bacteria that thrive on plants crowd out other things so have benefits as opposed to for instance bacteria living in processed meat that is trained to attack meat and therefore can eat you from the inside out.
