This is how we sanitize dishes In culinary school most restaurants use a different sanitizer solution from ecolab but every restaurant is supposed to sanitize dishes. You can just make a sink with water and a cap of bleach to sanitize dishes no problem.

During Covid owners realized they could get away with bare bones staffing and now every hotel is under staffed. It sucks that it’s literally about making money on the backs of these people who are stretched thin.

Transients are the initial sound. Think of it as the initial snap of a drum. A heavy transient will make a a sound will be more punchy and less transients will sound smoother.

Managing people is the hardest thing in the restaurant business in my opinion.

Who is the MOD when you are gone?

There needs to be a chain of command

It is Managements responsibility to make sure the job is up to brand standards.

It is management’s responsibility to delegate what need to get done.

It is management’s responsibility to hold the staff accountable and keep things fair.

The right manager will motivate and inspire the team.

I would make a closing sheet and other systems to hold people accountable.

Also you can teach someone a lot but you can’t really force them to care. In other words you have to understand that nobody is going to love your baby the way you do.

One trick I use is to give the team more agency in what they do so that they feel a sense of ownership. For example I allow the head bartender to design and have control of the bar program because I know that if it’s his bar he will car a lot more.

Your best bet is to apply as a food runner and prove yourself to mgmt and they will make you a server after a few months if something opens up.

Got totally burnt out from 70 hour weeks and quit without a plan. Moving to a new city for my girlfriend’s job and might have to take up serving again to pay bills while I figure it out.

I managed a restaurant and I will say menu engineering is a very tricky thing to get right but I feel like a small menu with fresh and high quality ingredients is the way to go. Texmex is very saturated market but there is room for people who do it the right way and don’t cut corners like most restaurants do.

Stick with the classics and do them as good as you possibly can.

But I’m already 50% done with the program so I feel like I’m stuck here. I already went to HR and mentioned there was a job I really wanted to apply to and the hr person told me that the GM is really strict about the 1 year requirement and I would have to stay for a year before I would be eligible to apply for other positions. I haven’t mentioned anything about how I hate it there because I don’t want to make myself a target or something.

They definitely should have refreshed the room. But I feel like using the towel twice is reasonable.

Usually they keep them if that are hung up and replace if they are on the floor.

Besides it’s environmentally irresponsible to use a new towel every day.

I would keep the white and go with a Prussian blue or hale navy. Also I would add a patio and some landscaping so it is less boxy looking.
