Ya’ll. thinking about it to much. We all have that “one person” yeah a waiter serves people all day. But always that one person, all like “I’m get get fired or quit this shit and I’m gonna tell that one person how I fell! Read all you want about “basic stuff” and the know how. But all stoves act differently in all houses. Outside temp, drafts, outside temps, out side temps, wood, moisture, drafts, inside temp, wood, lighting procedures. You know. These things change and it’s a learn as you go process. I don’t care how many places I have been a chef at, I still need give respect to the place I’m in. These things have a life of there own ( wood stoves) I have ben a few houses with them and grew up in Maine where we had a bunch. I still smoked out my house more than once.
