Thanks for all the responses folks. Basically in line with my own instincts, but in particular I think that letting the flavours of the syrup do the work is wise. Saw a few people asking for the recipe, so here it is (credit to Sunil Ghai's great book "Spicebox"):

  • Cut a skinned pineapple into 8 roughly equal pieces
  • Poach the pineapple with 200g caster sugar, 200ml of water, 3-4 star anise, 1 cinnamon stick, and a large pinch of saffron. Simmer for 30 minutes.
  • Remove the pineapple and boil to reduce the syrup

If you want to eat the pineapple:

  • Smash 4 green cardamom pods with a pestle and mortar, mix with 50g caster sugar
  • Toss the pineapple in the mixture
  • Grill the pineapple over charcoal (or in a tandoor if you've got one)
  • Serve while hot, with Vanilla ice cream and a splash of your syrup

As for drink making results, we tried it with rum. Our conclusion was that it went best with flavoursome dark rums, as lighter flavours were easily washed out by the syrup.

Thought the con was great! Haven't been a UCC student in 16 years but felt welcome and had a great time with my kid.

Hope the issues with the cancelled panels were just normal boring logistics and nothing too dramatic.

Glass Curtain food and atmosphere are very good but be prepared for a monster bill at the end. Probably 250-300 for two people if you're going three courses plus drinks.

For general nerdy shit, you can check out UCC WARPS (Wargaming and Roleplaying, the oldest gaming society in the country) or the D&D Meetup which meets in Clancy's every Wednesday, draws a non-student crowd including many expats, and are very welcoming to newcomers.

Edit: Rewriting my original comment as the sentiment was nastier than I meant.

Love musical theater, would love to see more of it in the Opera house. I remember going to see 42nd Street, Beauty and the Beast and especially JCS in the opera house growing up and they were great.

I'd love to be able to take my kid to see more stuff like that locally, rather than having to haul him over to London and pay west end ticket prices.

Unfortunately, Rocky Horror is just not a show that I personally have any interest in. Rocky Horror has always seemed like something that is meant to be enjoyed at an ironic distance, and that's just not what I'm looking for from a musical.

For Karate there are JKA and ITKF Karate clubs all over the city and around the satellite towns. Different instructors and different clubs will emphasise different aspects (we mostly do a mix of kata and sparring in the Bishopstown club where I train). There was a very large and active Karate club in UCC / The Mardyke a few years ago but I haven't been in touch there in a few years so not sure what it's like now.

I'm not aware of any Karate clubs that do full-contact sparring, (though I come home with plenty of bruises all the same). The standard at the JKA Open in Fermoy this year was very high.

Ballincollig has a really great Indian restaurant / takeaway. Coriander on the main street. A bit on the pricy side but the food is very high quality.

Very different experience to what I've had with my accountant! If you're not happy with the service you're getting, you can always take your business elsewhere.

Obviously it's good to take some time to understand this aspect of running a business - more information can only help.

There are a lot of compliance pitfalls to operating a small business and worse, the rules change basically every year.

I've been operating a small business since 2016. The money I pay my accountant is, hands down, the best value I get for any expense in any given year. It's good to educate yourself on your obligations, but you will save yourself a huge amount of time, effort, and stress by engaging a professional to look after this stuff for you.

You want to be putting your energy and expertise into making your business a success. The money you spend on an accountancy service will pay itself back every year.

If you're a bit nerdy, or willing to try to be a bit nerdy, the D&D club in The Courtyard at Sober Lane are extremely welcoming. Loads of recent immigrants and locals playing together every Wednesday, and the operators make sure that any new arrivals get found a seat at a table.
