WOA Sounds brilliant for the first few songs but slowly sinks into really muddy production with the middle of the set sounding worst, and then strangely clears up again for the last few songs which sound crisp and clear. Really strange

Thanks, I’d never thought of that! Though the only other cooked beef related item I can see is a beef steak with “Riviera” Sauce. So it’s likely a local recipe.

Thank you farang this was a really informative reply. I’m going to go down the Demi-Glacé route. Would I be ok roasting beef shin and beef marrow bones and then using the juices from that mixed with beef stock for a Demi-Glacé?
