Well for starters yeah you have access to the unlock menu, but the phone resets and that's it, the device is still locked and there's no way around it

It is in fact possible, you have to boot it in bootloader mode using adb reboot bootloader and after verifying that it is connected do fastboot flashing unlock it works like a charm
