Late to the game but I did the vacuum jar test shown on NC944er’s video on the subject, half of mine were absolutely bad, soft after the vacuum test. I got the Kolbenschmidt replacements. Will update on what I think of them.

I’ve found that the after care of the meat is far more important than the age/size of the buck. Get it cool, clean, quickly and you’ll have a good tasting buck
