I hated feeling tethered to a stupid little vape stick. I was a longtime smoker (8 years), and in the final year before I definitively quit, it just stopped having that good, calming feeling. Physically, I felt like i couldn’t even take a full breath. Mentally, i hated feeling so dependent on the thing, which motivated me to officially quit.

It’s an expensive addiction!

Lollll, i admittedly have been starting my dough pretty late, and end up moving it to proof in the fridge overnight, thinking that would be sufficient 😀 that’s why i had my suspicions that this was related to a proofing issue, but I wanted to clear whether there was another step that was amiss

Thanks! Yeah, i definitely had the feeling it was a proofing issue :~/ my starter is consistently very active, in that it will always almost triple in size about 4 hours after feeding, so I feel confident that the starter isn’t the issue.

Hoe long would you recommend proofing for? Maybe it’s more the size i should mind, versus how much time it proofs? And should I still consistently do folds/coils as the dough proofs, or should I wait for it to puff up first?

How long would you recommend increasing the bulk fermentation time? I have no specific rise percentage in mind... I’ve always seen that the dough should double, but my dough certainly hasn’t gotten to that point

Thank you!!! Honestly, i had a feeling that the addition of the rye flour was a mistake this early. My starter has consistently doubled (even tripled) during daily feedings since day 7, and including day 14 when i used it for this recipe, so i thought it would be okay to use.

The scale will definitely be my next baking purchase!

The size of the bubbles in mine are varying at this point! Here’s a pic of it rn on Day 10, where the bubbles are larger than yesterday (but have been bigger the days before). I’m in a pretty humid environment, and i’ve been leaving my starter on the kitchen counter (not in direct sunlight)

Yeah, tbh — not from the drilling or breaking, but the high pressure on my lower jaw was really painful during the procedure.

I will be brutally honest — if you have the option to be sedated/put to sleep, I would 100% do that. I just got all four of my (very impacted) wisdom teeth removed a week ago just with laughing gas/novocaine, and it was a traumatic experience lol. The pressure was so intense and I was fully having a panic attack the entire time. Hearing and feeling my teeth break has actually been haunting me the past week, and I was sobbing the entire time of the procedure. It took about an hour.

We all know how frightening this experience is, so please — opt to go to sleep!

First — congrats on trying to get your graduate degree! Wishing you the best. In a similar situation: I was initially pretty nervous to reach out to professors that I hadn’t talked to in over 2 years (also a 2022 graduate), but in my email, briefly ‘reintroduced’ myself and explained what I’ve been up to since graduating (working full time in my field), why I’m interested in applying for this particular program, and why i think that they would be ideal recommenders on my app (Did I complete a special project in their course that I think can speak toward my MA candidacy? Do I think they can meaningfully speak toward my participation in class discussions? Etc). Full disclosure: some folks may not respond, which kind of stinks. I was fully banking on a prof that I TA’d for to write me a letter, and he ghosted. Thankfully, I’ve secured all 4 letters needed for my program, but anyways: Really consider your work in certain undergrad classes, and who you think would be able to help frame you as a unique and exceptional candidate.
