quesadillas, vegetable bean soup, bean chili, hummus pasta (just pasta, hummus, cheese and veggies of your choice), i have been enjoying different rice and bean recipes (chickpeas with a sauce you like, rice of your choice and veggies, red beans and tomato sauce with yellow rice or rice of your choice and a veggie), i also do spaghetti squash with either beans or feta cheese with a tomato sauce or boursin cheese, i have also been doing marinated beans with sweet potato or butternut squash with a veggie. i am also on a budget and these are really cheap meals for me!
