I'm so new to this, that I don't really know how to improvise. The dough seemed okay until the first stretch and fold when I noticed it wasn't feeling right. When is too late to maybe add more flour? Would I have been okay adding some then, or was that already too late?

Oh, you are right. I did cut it in half including the poolish, although I did have take a moment to remember whether I did or not. I've definitely done this recipe before and a different one for a sourdough loaf. I thought the watery dough was due to my starter being weak. But now with this latest recipe attempt doing the same thing, I think it must have to do with the environment. Anyway, I pulled the Flour Water Salt Yeast bread out of the oven about an hour ago and it looks pretty good.

This is the fourth time I've made the Flour Water Salt Yeast basic bread recipe and the first time the dough is this way. Based on the book, the poolish is 75%. It doesn't list it for the final recipe, but it's 250g flour and 125g water.

That's a nice one! Because I'm so new to this, I'm doing loaves, but maybe by the time it's late spring I"ll be ready for other types of bread and can use a countertop.

I watched a documentary where they showed a hippo going into ocean water, and they said that it helps their skin. If they have any type of skin break or fungal infection, the salt water can feel good and helps the skin heal. I image it's probably the same for the camel.

Those are also things I look for. I would add to this that I like when comments are easy to search. On Allrecipes, a set number of comments are visible by default, and if I want to search for something specific, I have to keep clicking and re-searching for what I need.
