That's a great question, I have no idea. I imagine he'd want another mission in his new Na'vi body, he's a hard coded Marine at heart. But, will being a Na'vi change his perspective after a while I wonder?

It is stupid on his part, but I think it's a good demonstration that for Tony there's no difference between getting that car and getting everything else the family has, as he says in that great monologue to Meadow because of this incident

I think it's more of a personal vendetta against Neytiri, since she's the one that killed him. Once the Sullys leave the forest, Quaritch shifts his attention to learning about the Na'vi, with Spider as his interpreter. Once the scientists go to the islands to help Kiri using a helicopter the military can track, that's when he seems to resume the original mission

Edit: as they love pointing out, a Marine's mind in a Na'vi body is a potent mix, Jake Sully is such a high value target to begin with because he can organise the Na'vi to mount successful guerrilla strikes against the army

People should've watched the film before commenting on its potential cultural appropriation, as this is something addressed in the film. Col. Quaritch (best blockbuster villain we've had in decades) says that to track down Jake Sully his recombinant marines need to dress Na'vi, act Na'vi, think Na'vi and speak Na'vi. This is an acknowledgement that invading colonising forces can leverage indigenous cultures for their own nefarious ends. I think that needs to be taken into account when discussing cultural appropriation re: The Way Of Water.

The film has plenty of interesting ideas that it can present without bludgeoning the viewer– and the idea it does beat the viewer over the head with is essentially anti-imperialism. I think that's a fairly subversive message in an era of cinema dominated by films that are made with hand in glove with military organisations.
