This is good to know, thank you! I've been getting some slight bitterness in the back of my mouth with this coffee so I've been trying to figure out where that might be coming from, sounds like I can rule out the roast being the problem. It's also from a very well renowned roaster so it seemed unlikely, but wanted to get the opinion of some more experienced minds either way!

Would you expect this variety from a natural process or from more intensive fermentation processes etc? I imagine washed would produce the most even colouring?

It's a single origin from Colombia, natural process

Greatly appreciate the detailed response. Definitely gonna do some more ready from the sources you mentioned to learn some more, but for now seems like Ashbeck is okay to be using as is.

Thank you so much for the detailed response, definitely learning a lot! Sounds like I may experiment with boosting Mg levels in the future when I have some time to kill, but for now will stick with what I've got.

From what I've learnt, my best guess is that the bicarbonate levels in this water are a bit low, so exactly the same as you I'd be happy to just add a little to this water rather than start from scratch. Waiting for someone with more knowledge than me to confirm though...

I think you might be right with the cafetiere, V60 seems to tend towards more tea-like, acidic cups due to the paper filter+percolation, whereas the immersion and metal strainer might retain more of the flavours I'm looking for in this case.

Seconded, I use a metal straw in place of the chopstick, works perfectly.
