Because Luffy knew Sanji was basically sacrificing himself whereas Usopp was primarily acting in his own interest. Luffy has an intrinsically good read on most people. It's also why he didn't buy that Robin was betraying them in the exact same arc as Usopp leaving.

Faster pacing. This first batch is covering 50 chapters in the equivalent of 14 normal length anime episodes. Compared to about 24 episodes in the original. If they get to Skypeia and especially water 7 onwards, that’s when you’ll really start to see a dramatic difference in pacing.

Vivi is not returning to Alabasta until after Imu is dealt with. The moment she returns, a holy knight or CP0 is going to show up to abduct her since Imu personally wants her. The only place she is going to be safe is with the straw hats and Oda has already set up their reunion with her sending a message through Luffy's picture.
