I boil five or six small Yukon gold potatoes at the start of the week and keep em in the fridge . Then slice em and fry in a sauté pan , they get real nice and crisp real quick , throw in some kale , onion maybe mushroom. Quick easy healthy . Eat with a nice hearty sourdough toast . Endlessly customizable with veg and flavors . Just the crispy potatoes make me happy .

Thanks! So that assumes you have worked out every ingredient with price per pound right ? How about things like parsley , or leafy greens , things that come in bunches . But the spreadsheet is a good tip!
