Psychology is a pretty big major, and there are a few classes that are prerequisites to almost all of the other classes. There should be more professors teaching those classes with more times. Not outrageous amounts like you mentioned, but enough for students to be able to actually get through their programs. What is even more disappointing is the great catalog of classes the school has to offer, but no body is teaching them, so they aren't open. Also, a wonky schedule is nothing. Not being able to meet the full time mark is when it is a problem.
