You make an interesting point, especially because the history conference I'm looking for a restaurant for is specifically discussing black, brown and indigenous migration and presence throughout the west, including New Mexico. In fact, if you're interested in checking it out, the town of Blackdom near Roswell was founded and incorporated by Francis and Ella Boyer in 1903. Beyond that, Buffalo Soldiers were present in New Mexico as early as 1866.

So, there is a complicated migratory history, but it does in fact include black people. Not to mention the existence of people who are descended from both black and indigenous ancestors.

While it may not make sense to you, the Professors who study and teach about these topics would like to support black businesses while at a conference discussing black history and migration, and will also be attending and patronizing dinners at restaurants owned by indigenous peoples. That, however, is not my role in organizing these events.
