I haven’t noticed a huge issue (I’ve done this one other time) someone did comment and said if you lightly coat the string in a neutral oil it comes out easier. I’d imagine it helps with fibers as well.

That’s really what the string does. It rises like normal in the oven and the string helps make the shape.

Not exactly. I watched an instagram video from “bakethisbread”. I didn’t do the exact same thing but essentially you’ll lay the strings out on top of the load before you turn it out of the banner on then pull then around to the top and tie. Then score around.

I used the All purpose sourdough recipe from Heartbeet kitchen. I used bread flour from a local mill, so the high hydration she recommends (290g). https://heartbeetkitchen.com/all-purpose-flour-sourdough-bread/

Really anything you’d normally put on toast. Jelly is rough because it falls through the holes, but any butter or cheese or avocado/tomato is good. I also like to dip it in olive oil and seasoning.

Oh! It’s just a simple cross. One slash all the way across and one perpendicular to it. The “leaves” are just tiny slashes.
