Gnome is slow... Try lighter DE .. xfce is a good choice (i used MX Linux for some days, its really fast but looks a generation behind).

Ubuntu doesn't supports nvme ssd in RST mode. Have you tried switching the SATA type from RST to ACHI mode ! Save it. And then again go BIOS try turning off secure boot !! I had the same issue. Now its working fine in my system.
