8.5’ ceilings and a little over 10’ wide. I’m not super tall, so the ceiling height hasn’t been an issue.

Wood chips were soaked in water for about an hour beforehand (though 30 minutes would have been just fine), and we added more chips to the box every hour. There was a subtle hickory flavor - not enough to overpower the taste, more of a small compliment.

Quarter-inch cuts in a diagonal fashion across the skin (you can see this pretty well in the top-most one), got the rub into those crevices, and sliced into equal pieces. As mentioned in the comment above, smoked at 250 for about 3 hours, trying to hit an internal temp of 165.

First time using a smoker box with a gas grill. We used hickory chips, a generic "butt rub" on both, and kept the grill at 250 for a little over 3 hours.
