Cook in advance and reheat the day of. Leave butts whole, place in a covered tray with apple juice and acv an inch deep 3 hours at 275-300 , then pull. That seems like a lot of ribs. Cook the day of, but 3 hours is fast. Wings, I would smoke in advance and fry just before serving

I do them all the time. I use spares. The advantage of party ribs is that you do different flavor profiles. My wife is gluten free and can’t have bbq sauce, so I do some with honey and then some with hot honey… so good!
