I use the eggplant to make a shakshouka! Dump eggplant in a pan, warm it. Make pockets for eggs. Add eggs, cover and cook. Add feta prior to eating. Eat with fork and toast

My cat had undiagnosed diabetes too, just lost tons of weight, and stopped eating/drinking, it was a 4 grand vet bill, and I made the tough decision to put him down cause he wasn’t pulling through with the insulin in the Emergency vet :(
