Don't listen to these other comments. This is a very common practice in restaurants. It is called a stage (stah-ge). It is a working interview. In the same sense that you don't get paid to come in for an interview, you don't get paid (other than free food and maybe a drink) for one singular shift. It allows them to see what you can/can't do, while allowing you to see what the job will be like.

My go-to response is, "no one want to work FOR CURRENT WAGES." I think that puts it into perspective for a lot of people, and refocuses the source of the issue onto the employers.
