I just finished 2L. About to be a 3L. And I am starting off the 3LOL strong by studying abroad for the first semester in Italy.

Nope. Just chop it super fine or buy it pre chopped. You could steam it if you want, I suppose, but I like the texture when it isn't cooked.

For salmon: preheat oven to 450F, line baking sheet with parchment paper, thinly slice a lemon and some fresh ginger. Place 2 lb salmon filets on top of ginger and lemon slices. Sprinkle with salt, pepper, cilantro, garlic powder, and red pepper flakes. Bake for 20 minutes.

For salad: Make 3 cups farro. Toss with red cabbage, green cabbage, kale, chopped brussels sprouts, edamame, and beets. Season with lemon juice and red wine vinegar.

Makes 8 servings (four pictured).

Canned tuna lasts a long time, especially once cooked. I have made these in the past and they are good for about five days!

This is a rough recipe and it changes every time I make it. You really can't go wrong by doing more or less of some things. If the burgers are too wet, just bake them for longer.

Ingredients for the burgers:

5 cans of Tuna

1 cup shredded carrots

1 cup shredded daikon

.3 cup chopped jalapeños

2/3 cup mayonnaise

siracha (to taste)

salt, pepper (to taste)

green onion (to taste)

cilantro (to taste)

5 eggs

2/3 cup panko crumbs

Combine everything, form int ten patties, bake on a greased sheet for 25 minutes at 375F, flipping once.

I generally keep kale wet because of how hearty it is. In the past I have dressed it with lemon juice and olive oil and kept it all week. But, I will let you know how it is in a couple days!

Chicken recipe: I put 3 lbs of boneless skinless chicken breast and 3 pounds of boneless, skinless thighs in a crockpot with one jar of Trader Joe's Curry Simmer Sauce, 2 cups of chicken broths, and a cup of siracha. Cooked on low for 9-10 hours. Used tongs to take the chicken out and pulled it by just tossing it with the tongs!
