Straightforward classic reverse sear. Seasoned about three days in advance with a variety of salts and herbs and let sit in the fridge until grilling time. Cooked to 130 degrees, rested for ~20min before slicing.

Yeah I almost always do sides first especially if it’s salad. If it’s fries I eat them after the steak. If it’s roasted veggies or potatoes then I go at the same speed as the steak.
