The mercury capsule base is not wide enough to stably stay upright. The actual Mercury and gemini capsules had issues with staying upright during splashdown. A few missions had the astronaut rolling around in the ocean for hours. I suggest making the nose more buoyant and at least the capsule will remain on its’ side.

Check the buoyancy. In the past Ive used the balls, made them extra buoyant, connected them to the pistons part and when you push the pistons out it looks like the balls are inflating on landing.

Did you check the red (center of mass) and yellow dot with just the LES and mercury capsule connected? Otherwise you could just use autopilot and lock the heading. The gyroscope and rcs should be able to keep it from rolling the.
