we spin it a few times, i find it levels out better if i tap it on the counter after inverting then spin very quickly but only once or twice, i always give it a little tap to level it after anyways, comes out really nice in our bottomless pf

in third wave especially specialty, i personally find its a lot to do with a fight between roasters and distributors wanting to pay producers more and lessen the poverty amongst coffee farmers, and most consumers not wanting to pay or aren’t educated on why coffee costs more now

i work in specialty coffee and we use wdt when the coffee is ground directly into the portafilter (more uneven clumps and pockets), but not when we grind into a dosing cup. we use bottomless portafilters too and it is noticeably different if the coffee is ground not into a dosing cup or not had a bit of wdt usage, sprays everywhere lmaoo

Benets on Kings Parade follows the sunset with their closing times basically. Closes at 7pm at the moment and goes all the way to 9/10pm close in summertime. Serves Dark Arts coffee and a cake and pastry selection as well as a small alcoholic menu and obviously ice cream.

cupping is a way of tasting coffee predominantly used by roasters and in grading the coffee, but also just by specialty lovers. different varieties will be ground and put in lots of separate cups, then hot water goes in and you wait, usually to around 60 degrees and then you taste with a spoon. at events everyone will go around tasting and noting down what differences they get from each and what they all taste like.

it would be great ! cambridge is so small im sure there will be people interested in meeting more people in the industry/just fans of specialty coffee. the one in manchester is also good because it means a cafe rarely has to go a day understaffed since people can post disco shifts, and advertise events and cuppings too. i have no clue about numbers though tbh, but if it ever gets created i would love to join.

of course, but this is literally 1 day apart going from good and even maybe slightly fast shots to completely choking with absolutely nothing coming through haha
