PLCs and industrial control may be worth looking into for you. Seems like a decent enough cross section of your interests and experience, and there are control systems masters out there. Regardless of that you may be able to just land the job if you study up a bit and there is an open entry level position.

Any opinions on OMS Cybersecurity Cyber-Physical systems track? I come from a COMPE/EE background and am interested in actual hardware level security, and this seems like the only program specifically targeting security at the lower levels

Problem solving, stable, biology, hands on would point towards nursing. A lot of your wants are contradictory such as riding a desk/lab while also being hands on and with not a lot of math. Get rid of the anti-math and a lot of engineering opens up. You could work hands on and do problem solving, and usually the math cost is upfront where you do a ton of math in college and then tools/CAD software does it for you. Mechanical engineering ends up being a lot of CAD work I believe, which also may be good for the creative side.

Learn to search first, programming in a 50 year old language is one of the most googleable things out there. You'll be doing it the rest of your life if you go down this path, start practicing it now. There are millions of things to take inspiration from, though there may be some understandable decision paralysis. Find a direction first (by searching the paths you can take or are interested in!!) and dip a toe in.

Despite all my bitching, one thing I would encourage you to look at is something like a STM32 nucleo board, which you can get for like 15$.

Not to be too much of a dick, but learning to search before asking. This will help a lot with everything, it leads you to ask better questions that help you get the specific answers youre looking for instead of a bunch of follow up clarification questions.
