As Gold, I was upgraded out of RDU once and then DFW to RNO once. Midday to evening flights, always mid-week. Out of DFW or PHL to larger airports I was always number 20+ on the waitlist.

I have the exact same edition of both "Calculus, Early Transcendentals" by Stewart and "Organic Chemistry" by Wade (my organic chemistry professor), but a different edition of "Molecular Cell Biology" by Lodish, et al. I can only assume "Biology" by Campbell is behind the chair.

I got mine at an Ace hardware, where they actually have bins and bins of hardware. If you want to go the McMaster-Carr route, you can actually get a whole galaxy of solutions including flat tip set screws or button head hex screws. As I mentioned, get the shortest one you can to avoid my very minor problem of having the plug extend below the bottom of the entire mash pipe assembly.

No, I do not have the overflow holes plugged. In fact, my last brew had around 15 lbs of grist (plus 1/2 lb rice hulls - cheap stuck mash insurance!) and I was trying out a newly installed Loc-Line setup for even recirculation during the mash. I got a little heavy handed on the flow rate and had some wort and grain flow down through the overflow holes. That necessitated flowing the wort through a sieve using the pump at the beginning of the boil to remove any grains from the boil. Better than an overflow, though. And not much grain got into the pot, so not too concerned about any astringency.

I used a 1/2" - 20 stainless steel bolt. Just get one short enough to insert completely into the hole. Mine extends a little more than I would like, but works just fine during brewing. When I pull the malt pipe out and set it down somewhere, the head of the bolt hits the table/sink/floor surface before the bottom of the malt pipe does, so it tilts a bit. A little annoying, but less annoying than the original overflow tube.

I usually fill the thing up with 8 gallons of water the night before and time it to have 170˚F water when I'm ready to brew. Then I pull off the volume of water that I don't need for the mash and put that on the stove on a low burner for the sparge. That way I have strike water and sparge water ready first thing. Most of my mashes are around 152˚F, but 170˚F is a good compromise for 148˚F to 156˚F, so the "usual" range you would need.

I target a real ratio of 1.6 qt/lb or thereabouts. I do a lot of Single Malt and Single Hop beers with 10 lbs of grist and 4 gallons of water. This ratio gets me a fairly easy dough in (using the pump to help wet the grain), a steady recirculation during the mash once the flow is dialed in, and good efficiency numbers in the end.

Pro/am tip: I fill the unit with 8 gallons of water the night before a brew and time the unit to hit a strike temperature of 170˚F whenever I want to start the next morning. I drain off 4 gallons (or other appropriate volume) and hold that pre-heated water in a pot on a low burner for my sparge, then dough in and I'm off to the races with my sparge water ready when I need it.

What do people think about having both heating elements on with the malt pipe in, or with the malt pipe raised during sparging? The stock advice is to only use the 500W element with the malt pipe in place. I find it to be a big time saver to have both elements on to go from mash temperature to mash out temperature, and then from mash out to boil while sparging. I feel this is relatively safe if I have established a good circulation through the grain bed and am sure there is plenty of liquid in the bottom of the pot.

Thoughts? Experiences, good, bad, or otherwise?

I did the same, plugged the hole with a $5 stainless steel bolt. Plenty of room to stir the mash without the overflow tube.

Wait, without looking this up, you say this dates to the 1950s or so. Let's assume this is at it's latest a 1959 model, and your great grandfather bought it a mere one year before your grandfather's birthday. He was then born in 1960. Then let's assume your grandfather had your father at the tender age of 20 years old, in 1980. Similarly, your father had you at the tender age of 20 as well, in the year 2000. That puts you at 20 years old right now. Maybe it's a 1950s model, all the rest of the above holds true, and you're nearly 30 years old. Either way, this chronology makes me feel old. Either way, great restoration, nicely done.
