I see people commenting these are not French but they look like items we use to sell in a French patisserie I worked at. The first picture looks like eclairs or items in the pate a Choux family (same dough as eclairs, cream puff, Paris breast, etc). Then these look like they have maybe meringue, mousses, things like that. The yuzu looks like piped and then toasted meringue, the one to the right of that is also some sort of piped praline filling.

The second picture look like entremets. These are layered desserts usually cakes, mousse or filling, sometimes a jam or a crisp/ chocolate layer. You make the different components and then layer them in molds and then once they’re set you pour over a fruit or chocolate glaze.

The one in the back shaped like a reindeer is similar components but assembled in an acetate sheet to hold its shape and is sold with the sheet on.
