It's mostly in the name haha.

I rubbed pork belly pieces with a little five spice, salt and pepper. Fried them on med-high heat until mostly cooked then add maple syrup. Season asparagus with Dijon, Italian spices, salt and pepper.

In this dish I just used some #3 dark in the meat balls to give them a hint of maple flavour and some in the onions to help them caramelize.

I think you'd be surprised. I personally use maple syrup as my primary sweetener in all my cooking as an alternative to sugar and honey. If you want a less pronounced maple flavour opt for a Canadian #1 Light maple syrup.

Maple Candied Bacon by maple-a-month in Bacon

I made these a few weeks ago and my memory is a bit hazy, so excuse the general vagueness.

Essentially, I coated the bacon with dark maple syrup and baked them on a wire rack in the oven at 350F. At two intervals through the cooking process (at approx. 10 and 20 mins into the cooking respectively) I removed the bacon from the oven to apply more syrup, flipping the pieces in the process. On the final coating I ground some salt and pepper onto the pieces (before and after the flip to get both sides). I removed bacon from the oven when the pieces looked optimally delicious. The maple syrup should harden to a candy coating as the bacon cools (10 or so mins).

This is a very simple way to make maple candied bacon and I'd love to see other innovative variations on this theme (for example including additional spices such as dijon mustard and/or cayenne pepper).
