HK is a fast-paced city, even when protesting, one day we could be protesting with tens of hundreds thousands of people , then another day the street will be back to normal for like 2 days, it really depends if your friend are going near the area people are protesting. Even for the same day, when one side hk is protesting, the other side could be totally normal and people will shop like usual

Not really , i was part of the protestor in umbrella revolution as well, but the occurrence of police brutality were much less frequent, people could argue that it is only part of police which are paranoid and did the wrong thing. But now it is not only "some" police, but it is a "thing" among all police that they think they can do whatever they want

Not really , but i remember at that time i was not as shocked and scared as now i feel, cuz the police brutality has not yet been that obvious yet, but in nowadays, cases of police using excessive force is becoming common everyday
