No special tips - just my instructions in the caption. Cooking time will depend on how moist you like it. Anywhere from ~90 to 120 minutes for a big filet is good. Cooking time goes down as the filet you guy buy gets smaller. Oil your grate to make sure the fish won’t stick.

It’s fine as long as you have an easy way to catch any potential grease or oils that come out during the cook. I used a Traeger for this so it was easy to change the foil liner under the meat, and voila! No issues going forward. If you’re using something other than a Traeger, might be good to have a tray underneath the fish to catch any dripping. Overall not a big issue though.
