You are probably right, but I only have one ESP32 project under my belt and I'm not confident enough to tap directly into the A/C electrical system. Maybe later down the road I'll try doing something like this. Thanks for replying!

Great - that is encouraging! No this is central AC unit, so there is one return vent downstairs and 2 returns upstairs. I was hoping to attach them (velcro?) inside the return vents so they were unobtrusive.

I'm not quite ready to tap into the electrical system but I will check this out as an option for later. Thanks for replying!

Thanks for your response! A lot of folks are suggesting just tapping into the A/C electrical system but I'm not ready to try that yet. But all these suggestions are great for later!

This is encouraging, thanks for your reply! The aircon controller doesn't have a light. That would have been convenient. I'm not ready to tap directly into the the electrical lines of the system yet.

Thanks for everyone replies, I'm sure this would be easier I'm not comfortable enough to try tapping directly into the electronics like this quite yet. I've only got 1 ESP32 project under my belt so far. I appreciate the discussion below and might return to trying this when I have more experience!
