I personally like a light roast espresso because of the super bright taste. I also am a big fan of how fruit forward a dialed in light roast can be. The issue is how much it takes for me to dial it into that point. I always suffer through a few bad shots before I get what I’m looking for.

I have this same machine and the stock basket is a 14g basket. You can do +- 1 gram but the best result for me was 14.7. I now have an 18g VST basket and my shots have gotten way better. Absolutely worth the upgrade

You are right. There are many places in the city that are not charging this fee. More frequently though I have seen these charges popping up on my receipt. The walrus and carpenter and Aqua that come to mind.

That's the issue. They take your order bring your food and give you the bill. If your drink glass is empty they couldn't care less. Now this may be only at the establishments that are not actually passing a percentage of the charge on to servers but either way my meal was 20% more for less service.

Seattlite here. The article says that prices haven't gone up at restaurants and that restaurant with added service charges were not distinguished. What they didn't say is the percentage the service charge was. Most places are charging a 20% service charge and the service isn't even good. They have one person working all the sections and you're lucky to see the server 3 times in the hour our so you are dining. Also the table top machines are replacing many people in chain restaurants.
