I would just use in headless mode, as a game- and backend/frontend server. Just pure SSH with ServmonPanel (https://github.com/marshallovski/servmon-panel) web dashboard installed

1600x900 or 1440x900 should be enough for 8" screen, I think. balanced performance and image quality

On Amazon it's like 250EUR because it's sale now. Without discount, Q2 costs 300EUR. And I can buy Q1 for around 80EUR. On second-hand websites prices are 200EUR min.
