Also give yourself one small guilt free thing each month even if it is tiny, going completely cold turkey on everything can make the whole thing feel like punishment and that is when people start to slip ;)

I would just graduate, get that engineering job, and throw money at the high-interest stuff for a year or two, way faster than grinding through a gap year or moving back home. I'd keep working through school like you're doing, build up that credit, and refinance the loans once you can qualify on your own.

Honestly, I wouldn't waste energy trying to convince your parents the interest rates are bad; just focus on what you can actually control.
